Cheesy Jalapeño Popper Baked Chicken Casserole

Yes, it’s a mouthful. The title. AND the forkfuls you’ll take when you make this low-carb deliciousness.

 
 
  • 2 lb chicken breasts, sliced in half, length-wise

  • 2T garlic powder

  • 1t (each) salt & pepper

  • 1/2t onion powder

  • 8oz cream cheese, melty*

  • 4 jalapeño peppers, deseeded (keep the seeds if you like it spicier!)

  • 3/4C shredded cheddar

  • 5 crispy bacon slices, crumbled

  1. Preheat oven to 375 & grease a baking dish

  2. Lay the chicken slices in the dish

  3. Sprinkle the seasonings over the chicken breasts

  4. Get the cream cheese nice and melty (*microwave in a microwave-safe bowl for 25 seconds or so) then spread it over the chicken

  5. Top the cream cheese with the jalapeño slices

  6. Top the jalapeño slices with shredded cheese

  7. Bake for 25-35 minutes, the length of time will vary depending on how thick the chicken breasts are—the thinner the chicken, the shorter the cooking time. Just make sure they reach 165* F!

  8. Add the crumbled bacon and heat for an additional 3-5 minutes
